All these "action shots" are deliberate. I have tipped several rigs over, but almost all from inattention. For these shots, I'm already in the zone and know I'm pushing the limits. It takes a small amount of thinking ahead to plan the exit. There always needs to be room to exit the maneuver, for when you re-enter the player mode. This usually involves opposite steering and brakes. It helps if you choose a curve that doesn't tighten up too.

It must require excellent timing to get the wheels in the air and quickly exit the scene to go to photo mode. Are you able to recover from the spill after the photo? I stopped for a photo recently right before a curve and when i went back to driving mode, i promptly dumped my rig in the street.
